Our Kitchen
Restaurant divinely enhances the rural boundary of the Borgo and Apulia, combining with taste the intense scents of the countryside with strong flavors that recall the traditional Apulian spirit of good food.
The chef’s dishes
The food is mainly based on seasonal products grown on site in the annexed farm, fresh ingredients that our chef is able to manage in simple but refined presentations and our staff is able to serve on the boards with kindness and cordiality.
In addition to vegetables, dairy products, local meat, and biologic olive oil, completes the gastronomic offer of the Borgo the excellent wines produced by the family winery, “Taverna di Nova Siri”, from where come from prestigious labels and awarded prizes at national level, thanks to the cultivation and conversion of native grapes DOC and IGT.

The farmhouse is surrounded by the green frame of our agricultural company, on whose surface everything is rigorously cultivated according to the biological method, respecting the environment and the continuos pursuit of genuine products. Strawberries, oranges, clementines, grapes, extra virgin olive oil are just some of the delicious products that our generous land produces, with the last aim to serve them to our customers directly on the table of Valle Rita.
